We love quinoa! Considered a grain, it's actually a seed in the Amaranth family. It has been a staple food in South America for 5000 years and was widely consumed by the Incan Empire. Grown primarily in the Andes in present-day Peru and Bolivia, quinoa is an excellent source of protein and contains nine of the essential amino acids. It's also gluten-free, rich in fiber and contains antioxidants, minerals B vitamins and quercetin.
